How to make Filter coffee

Filter coffee, often called drip coffee, is a straightforward and rewarding brewing method that highlights the natural flavours of the coffee. Here’s a step-by-step guide to making a great cup of filter coffee at home:

Ingredients & Equipment

What you need

  • A coffee dripper

  • Paper filter

  • Kettle

  • Kitchen scale

  • Timer

Ingredients

  • Freshly ground coffee (medium grind, like granulated sugar)

 

  • Hot water (just off the boil, around 90-96°C)

Step 1

Prepare the Filter

Place the paper filter in your dripper and set it over your mug or carafe. Rinse the filter with hot water to remove any papery taste and to preheat your brewing equipment.  Discard the rinse water.

Step 2

Measure and Grind Coffee

Use a coffee-to-water ratio of 1:15 to 1:17. For example, 20 grams of coffee to 300 grams (ml) of water is ideal for one cup. Grind your coffee to a medium consistency.

Step 3

Add Coffee to the Filter

Place the dripper with the filter and coffee grounds on a scale. Add the coffee grounds to the filter and shake gently to level the surface. Tare the scale to zero.

Step 4

Bloom the Coffee

Start your timer and slowly pour just enough hot water (about twice the weight of the coffee, e.g., 40 grams for 20 grams of coffee) to wet all the grounds evenly. Allow the coffee to bloom for 30-45 seconds. This step releases trapped carbon dioxide and enhances the flavour of the final brew.

Step 5

Brew the Coffee

After the bloom, pour the remaining water in slow, steady spirals starting from the centre and moving outward, avoiding the edges of the filter. Continue pouring in stages, keeping the water level consistent until you reach your target weight. This should take about 3-4 minutes.

Step 6

Allow the Coffee to Drain

Once all the water has been poured, let the coffee drain through the filter completely. The entire process should take about 4-5 minutes. Adjust your grind size or pouring speed if it takes too long or finishes too quickly. You’ll soon master your grinding skills. Getting the perfect grind takes some patience.

Step 7

Serve and Enjoy

Remove the dripper and discard the used filter and grounds. Swirl the brewed coffee in your carafe or stir it in your mug to ensure the flavours are evenly mixed. Pour into your cup, savour the aroma, and enjoy your freshly brewed filter coffee.
