The Capucas cooperative farm, founded in 1999 by Jose Omar Rodriguez, takes its name from the local town of Las Capucas.
The coffee is harvested at its optimum ripeness and handed in at the cooperative. It is then washed, dried in a solar dryer, and stored in parchment before being transported to the port of Puerto Cortés.
Capucas farm were the first in the country to build a facility to dry microlots on a large scale with solar dryers.
The cooperatives we source from often do an amazing amount of community work in their towns like Capucas does, but they also have the infrastructure to set up and fund their own organic certification.
This coffee showcases a bold walnut body with a damson plum sweetness and a carob finish – a perfect coffee for those cold winter mornings.
